Hungry Tuesday Dinner

I was hungry on this Tuesday evening.  My day at work and my Tuesday task after work at church had left me little time to prepare anything time consuming.  Hmmm...I love quicky things that are easy and good for me.  This is low-cal, but it's also very tasty.

Chicken & Zucchini en Papillote


Tear a portion of parchment paper from the roll large enough to accommodate the size of your intended contents.  Fold in half and in half again.  With a pair of kitchen shears, shape into a cone by cutting around the top edge.

Slice a small zucchini into 1/2  inch slices and arrange on one side of the unfolded paper.  Cut half an onion into thin strips and place over the zucchini.  Add a few nubs of unsalted butter over the onion and salt and pepper, lightly.

Now at this point you can add anything you like.  I happened to have a package of chicken tenders on hand so, obviously that was my choice.  But fish is absolutely fabulous here.  

Salt and pepper the chicken and lay over the top of the veggies.  Fold the parchment in half over the bundle of chicken and veggies and begin crimping the edges by starting on one side and then simply folding one fold over another and so on.  It's a very tight seal.  Just before you seal completely, pour about 1/3 cup Marsala wine into the pouch and seal the end.

Carefully place the packet onto a sheet pan and place in a 375 degree oven for about 15-20 minutes.  The time would be determined by the size and density of your meat or fish choice.  If you use fish, 10-15 minutes would be sufficient.


Dinner in one packet
Remove the hot package from the sheet pan to a plate.  Cut open the top of the parchment paper and serve.  Delicious!  Even for a Tuesday dinner.
